"I grew up with this taste. When I moved to Ottawa, I missed it so much that I went looking for it. I found the people who still make it the old way and learnt from them."
This is the ongoing story of Ottawagram Ponir, a soft, slightly salty, handcrafted white cheese made in a small Ottawa kitchen, inspired by a tradition passed down through generations of Aushtogram artisans in Kishoreganj, Bangladesh. The name is a small tribute to both places: Aushtogram, where this cheese has been made for generations, and Ottawa, where I now call home. Alongside the traditional craft, I bring modern food safety practices and techniques to ensure consistency of quality and taste, no matter when in the year a batch is made. Trying for perfection one batch at a time.
